Gallberry honey is produced when bees forage on the gallberry shrubs that grow in pine forests and flatwoods across the Southeastern United States. Our is specifically harvested in Volusia County close to the Mosquito Lagoon. The bloom is relatively short each year, providing a limited window for this distinctive honey. Each batch is collected during this seasonal flow, then extracted, strained, and bottled in small runs to preserve its natural flavor and traceability back to the region and harvest period.
Raw, unfiltered quality
This honey is raw and unfiltered, meaning it is not pasteurized and is only lightly strained to remove larger wax particles while keeping natural pollen and aromatics intact. There are no added sugars, flavors, or syrups—just pure honey as it comes from the comb. Over time, it may naturally crystallize; this is a normal sign of real honey. To gently re‑liquefy, place the jar in a warm water bath and stir until the crystals dissolve.
